Default Anyone make salmon or tuna Croquet's?

My mom used to make these when I was a kid and I loved them. If I remember correctly she would mince up a little onion and add it to some canned salmon I think she used crumbled crackers as a filler but I'm not sure. I tried using pork rinds and it actually tasted really good except for one thing. It was really hard to work with. it fell apart when I tried to flip it. I'm thinking I might try the Atkins bake mix (been in my cabinet for ages) in place of flour next time. I think my mom may have used flour. I was also wondering if these have to be deep fried of if they can be grilled in a small amount of butter.

Add a couple of eggs--that will help hold it together. I hadn't thought of using pork rinds, although I use them for lots of other things. Great idea.

We love Salmon Croquettes. I fry mine but you can also bake them in the oven.

I just made some the other day, 1 can of salmon (of course those gross little bone thingys crushed up for extra calcium) and 1 egg, 1/4c ground up pork rinds and fried them in butter and olive oil. Yum. I use the left overs cold broken up on my salad the next day.

ok then it must just be me. I can hardly flip them without them falling apart. They are really tastey though.
