Most gums and mints have sugar in them and even the ones that don't have some carbs.
I have found that Wrigley's Eclipse flash strips have 0 carbs and are sweetened with Splenda...a good choice if you need to keep your breath fresh.

Default Flash Strips

Keep in mind that the strips are made with food starch (i.e., tapioca usually). So, even though it has no sugars, it still adds to your carb intake because of the starch. Starch readily becomes blood glucose just as fast as sugar.

Oh, I forgot to mention. In the food industry, starch isn't sugar (even though, to the body it is). So, even though it contains starch, they can say it's sugar-free with 0 carbs. In fact, it probably has a couple (if not several) grams of carbs because of the starch. Just one of the little ways the food industry has to mess with us and our diets.

I chew Trident White SF gum, it is 1 carb per piece 0 if you subtract the sugar alcohols. Also Smints has 0 carbs I use both with no problems or stalls.
