Scrambled eggs chorizo and black soybeans!
I was making huevos con chorizo the other day (cook chorizo for 8-10 minutes, add eggs and scramble) and I happened to read the recipe on the chorizo package. It called for beans and potatoes. No potatoes for me, of course, but I decided to throw in a handful of drained, canned black soybeans (Eden Soy brand) Delish! This is my new favorite meal which I garnish with small cubes of cheddar cheese, avocado slices, sour cream, and a bit of salsa. Some sliced green onions would be good on top, as well. I just wanted to share this because it lightened up the same old scramble texture.
