There are mock danish made like pancakes:

1 egg, 1 TBS cream cheese, 1 tsp vanilla extract, 1 tsp artificial sweetner and I would add a sprinkle of baking powder.

Or if you buy vanilla whey protein powder (at Trader Joe's it is very reasonable). 1 scoop, 2 eggs, 1 TBS heavy cream, 2 TBS oil, 1 tsp vanilla extract, 1 tsp baking powder
