Parmesan Baked Fish
This is an old recipe of mine and i was curious to see if it would work for induction. I think I did the fitday right. Let me know what you think
Parmesan Baked Fish Packets
4 Mild Fish Fillets (Tilapia, Pollock, Whitefish)
1/4 c of Mayo
1/4 c of Grated Parmesan Cheese
1/2 a medium Zucchini (sliced)
1/2 a red bell pepper (sliced into strips)
Cayenne Pepper
8 Sheets of aluminum foil (12x18 approx)
Cooking Spray
You are going to use 2 pieces of foil for each fillet, so double up the foil and spray some nonstick spray on all four.
1. Put 1 fillet onto each double layer foil sheet
2. Top with mayo
3. Sprinkle with cheese and cayenne pepper
4. Top with some of the veggies
5. Fold Tin foil up to make a packet, leaving some space for
airflow inside the packet
6. Follow for other 3 fillets
Bake in 450 degree preheated oven for 18-22 mins. Veggies will steam!
or 10-12 mins on a medium high covered grill
