Default Thanksgiving Eggs

Lately I've been REALLY tired of eggs for breakfast. Then the other day I was sauteing some onion in a pan I had earlier fried some sausage in. The smell of the onion and the sage from the sausage instantly brought my mom's Thanksgiving dressing to mind and gave birth to my new favorite egg recipe.

Thanksgiving Eggs

4 eggs
2 tbs sour cream
2 tbs diced onion
2 tbs diced celery
2 tbs olive oil
1 tbs butter
2 precooked sausage patties

Melt butter into olive oil. Crumble sausage into pan and saute with onion and celery. Beat eggs and sour cream until smooth. Pour over sausage/onion/celery and cook until done. These are AWESOME. I sometimes take a large tortilla factory tortilla and fold it in half with some smoked swiss cheese in the middle, then toast it until gooey. Goes great with these eggs.
