Well, I am brand new to this board too, but have been low carb for almost 3 years now. I am not on a weight loss program (you CAN eat too much of the right foods), I eat this way because I believe its THE healthy way, it has proven to be a huge benefit to my DH's diabetes problem. Now, that's not saying we don't get lazy, but this is a way of life, not a diet for us. That said I would like to share a few recipes that are tried and true in my family.
Banana Nut Bread.
1/2 stick butter, softened= 0
4 oz sour cream=4
2 eggs=1
low carb sweetener of your choice to = 1 cup ( I use a blend of stevia and liquid sacchrine)=0
1 1/2 tsp banana extract or 1/4 cup s/f banana syrup=1
1 1/2 tsp coconut extract or 1/4 cup s/f coconut syrup=1
1 TBS Low sugar apricot Jelly (NOT w/nutrasweet) this gives texture and only adds= 5 carbs
1/2 cup pecan meal=20-10
1/2 cup Gluten flour/ oat flour blend=25-10
1/4 cup dry unsweetened coconut=25
1/12 tsp baking powder=0
1 tsp baking soda=0
1 tbs s/f banana pudding dry=5
1/4 cups chopped walnuts -- optional
cream butter and sweetener till fluffy, add wet ingredients one at a time till well blended. combine dry ingredients in a separate bowl then add to wet mixture. spread into a prepared (sprayed) loaf pan and bake at 350 till done. 16 servings I cut it down the middle then 8 times across, it makes nice slices.
I subtract fiber, and that gives me roughly 6 carbs per serving. I don't use the walnuts because the pecan meal adds a nice nutty flavor. I would love to know what you think..please feel free to double check my calculations.
