Talking Waiting for my treat....

I'm trying an experiment... has anyone made the lc marshmallows? I'm trying to make strawberry-banana ones, and I can't WAIT for them to set up to try. I need something chewy and sweet....

I'm trying to come up with a way to make BIG batches of these. First I need to find out how they "keep".

Here's what I'm using:

2 envelopes of unflavored gelatin softened in 1c water
30 drops of liquid sweet-n-low

After gelatin softens, nuke on high for 2 min, or until dissolved (be SURE your bowl is BIG, or you'll have a gelatin volcano!)

Stir in one pkg sf Jello, any flavor, until well dissolved.

While this cools, beat three egg whites to soft peak.

When gelatin has cooled a bit, continue beating eggs while SLOWLY adding stream of gelatin mixture. Beat a while after all gelatin is added.

They can be molded, made in a cake pan..it can be chilled in the bowl then cut up... I'm trying a few ways.

Tried these last night, and now had another "chunk" for dessert. Chewy, fruity, scarily marshmallow-y. I think I'm going to make some and roll them in toasted, splenda sweetened coconut!!

I think I found a new "friend"..<moving recipe to front of folder>
