Default velveeta Cheese ?

Does anyone know if it is low carb? I want to make the mock mac/cheese but I really like a bit of veleeta in w/ my other cheeses. Don't ask me why I just like it extra creamy not stringy. I keep forgetting to buy velveeta and am putting off making it until then. Maybe it's not even low carb?

Nutritional information for Velveeta. I'd rethink using that, especially if you are still on induction. It has 3 grams of carb per ounce with 2 of those coming from sugar. Velveeta also has hydrogenated fats in it.
Cheese sauce made with real cheddar doesn't have to be stringy, but it does take some practice to get it right.

The mock mac and cheese tastes amazing if you use 1/2 chedder and 1/2 colby jack cheese. Grate a little extra over the top, and for the last few minutes of cook time, place under the broiler.

Atkins really does work better if you stick to natural whole foods. I don't think velveeta can even be called a food some times
