Apricot and goatcheese stuffed chicken
Take chicken breast, and pound with mallet (i like to cover in plastic wrap, to avoid bacteria).
then place 1/4c of crumbled goat cheese, and then 1 tbsp of sf aprict jam (i use smuckers) on one half of chicken. fold over and secure with tootpicks.
sprinkle with seasalt, pepper or cruched red pepper if you like a little spicy, and sage.
bake at 350 until done (about 25-30 minutes)
roughly 210 calories
4 net carbs (plus 3 fiber from sf jelly)
super easy and always a crowd pleaser.
