Default Low cost substitute for Atkins bake mix?

Has anyone found (or experimented) with a low cost substitute for Atkins bake mix for baked goods? Was wondering if soy flour could be used? Thanks.

Soy flour isn't something I would use..since it has a strong flavor I detest..and even the small amount in the bake mix makes it nasty to me!

Personally, I prefer to use almond flour. I got teh "Low Carb Comfort Food" cookbook, and so far, all teh recipes I've tried using it are great.

Here are some ideas:

Soy Bake Mix - Better than Atkin's Mix so they say?
2 cups soy powder
1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon soda
1 tablespoon bakeable sugar subst. like Splenda
1/3 cup shortening cut in with pastry tool
equals 3 gr 1/3 cup
Here is the recipe that you can make yourself to substitute for the Atkins Bake Mix. I haven't tried it yet. but the people on the list I got this from said it was better than the Atkin's Mix. If anyone tries it please let all of us know how it cames out.

I picked up this sheet from the health food store the other day. At the bottom of the recipe they give some substitutions for soy that gives a milder flavour.
I haven't tried it yet, as I'm still on induction. Let me know what it is like.

FAUX ATKINS BAKE MIX
1 cup soy flour
2 cups soy protein isolate
2 Tbsp. baking soda
1 tsp. salt
2 Tbsp. Splenda

Sift together, then store + use as you would Dr. Atkins. It's much cheaper, and things turn out better.

***** If you want a milder taste:

Substitute soy powder for the soy flour
Substitute egg protein for soy isolate

Here's a couple I found at low carb web sites.I only bought one can of overpriced Atkins bake mix and now make my own.
No Soy Bake Mix
1 c almond meal ( Process almonds in your food processor if you can't find it at a bulk food store)
1 c wheat gluten
1 c whey protein
4 Pkts Splenda
2 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Makes 3 cups- 53.2 carbs total

Soy Free Bake Mix
3 cups vanilla or plain whey protein powder
2 c almond flour
2-1/2 c oat flour
1 cup wheat gluten
4 tsp baking soda
5 tbsp baking powder
2 tsp salt.
Don't have carb count on this one.
