Default Meg/cheap low-carb meals

Hi Meg,

Just signed on here. I was searching the net for "cheap" meal ideas for my teenage daughter who is now living on her own, and found a thread you had participated on a year ago in which you offered to send recipes to a college student who needed to live cheaply, but eat well. I've included your reply to refresh your memory. I would love to have some of those recipes you mentioned, to share with my daughter if you have time to send them my way.

>>Look for the cheapest beef, which is usually a pretty good quality roast cut (cheaper price per lb than the lowest quality cut!) and buy a massive hunk of it. It will seem like you're paying a lot for meat, but it's cheaper than chicken or anything else. Buy some oxtails to go with it, some onion, leek, parsley. From there you can make goulash, unbelievable soup, authentic curries, and of course roast beef with gravy. All of these will keep in the fridge, and with the exception of the roast - the freezer for easy meals.I have some great recipes if you're interested.

The main thing that I can add is to shop around and take full advantage of the offers at each store, if they have an offer with a big discount on a certain meat then buy loads (use a few weeks budget and stick it in the freezer).

I'm a real cheapskate and when I go to the supermarket I go at the very end of the day just before they close, they often mark down the fresh meat by a LOT
