Snapper Vera Cruz
Tonight I'm having Snapper Vera Cruz' I made this for one but it could easily be expanded to however many you are serving.
Nice thing about it is that you don't have to adjust it all to make it low carb.
2 Tablespoons olive oil
2 Tbs. minced onion
1 clove garlic, minced
1/2 small chile, minced (jalapeno or serrano)
1 small tomato, diced
2 teaspoons capers
3 sliced olives ( I prefer Spanish olives in theis but all I have is black.)
1 snapper filet
Chopped cilantro (optional
Sautee onion and garlic in 1 tablespoon oil until softened; add tomato and chili and cook until mushy. If it's dry add a little water. Stir in olives and capers. Season to taste with salt and pepper.
Pat fish dry and cook fish in olive oil until it just flakes. Top with the sauce and garnish with cilantro if desired.
