Hi and welcome. I'm not a huge meat fan, either. I don't like steak and I'm not a big chicken fan. My way of staying interested is creativity, I guess you could say.
On induction, you can emphasize the eggs and cheese rather than meat, and get more fat from dressings, butter, olive oil, etc. I tend to prefer sausage, pepperoni and other processed meats, but I keep an eye on the carb counts.
I eat a lot of vegetarian 'meat-alikes' since my b/f is a vegetarian. Those are an option once you're off induction. They're a little higher in carbs.
When I do eat meat, I usually put it 'in' something else, such as soup, chili, or salads. Think (bunless) burgers or hot dogs; home made beef stew, or caesar salad with chicken and real bacon bits.
I've been at this since last March, and I have yet to be truely bored. Good luck!
