Hi and welcome to the forum!
Speaking as a veteran, it does get easier, and truly becomes a way of life. Now that's not to say that I haven't indulged in carby goodies once in a while along the way, but I was very good in the beginning and had tremendous results. Once I started getting close to goal I would allow myself treats like a slice of pizza (crust and all! ) because I knew that I was under control. I feel great now, and I know that I am in control of food, and that food no longer controls me. I no longer obsess about food, I don't get sluggish from sugar highs and lows, and that ultimately gives me more time and energy to spend on other things. Overall I feel great.
Your best bet to spice up your menu plans is to check out the list of LC foods in your Atkins book and maybe choose some new vegetables to try in a stir fry or something? Or even steamed with butter? Or maybe try out a new seasoning? The low carb recipes link at the top of the page may give you some ideas too!
