Chinese Chicken Thighs
I got lucky with this recipe the other day when I was making another chicken thigh concoction and ran out of marinade, so I whipped this up. As I result, I'm not sure exactly how much of this marinade you will need per pound, but this recipe coated 8 large thighs quite nicely (YMMV).
You may not have orange oil in your pantry, but you could substitute some orange zest or a little orange concentrate. But if you have a decent grocery store in your neighborhood, they probably carry the orange oil in the bakery aisle. It's a great way to add orange flavor to foods without adding any carbs. A little goes a long way and it's not expensive. I use it all the time.

Chinese Chicken Thighs
8-10 Chicken Thighs w/skin on the bone
1 C Rice Wine Vinegar (make sure there's no added sugar!)
1 TBSP Sesame Oil
1 TBSP Soy Sauce
1/4 teaspoon ginger powder
1/4 teaspoon pure orange oil (I use Boyajian brand)
2 packets Splenda or 4 tsp of the spoonable Splenda.
Mix marinade ingredients together in a large bowl. Add chicken thighs, cover and refrigerate for one hour. Preheat oven to 350 degrees Fahrenheit (Bake setting). Line a shallow baking pan with foil and pop the thighs in the oven for 1 hour.
