there are many great recipes, too, webmom--do a web search for "low carb recipes" to get some good sites, and check books out of your local library. At the only point when I was bored (long ago now), I made a commitment to try a new recipe every week, and found some great ones.
There are a hundred great lc veggies you can eat, and you should be "getting your carbs" as veggies. Grains are a problem food for a lot of people, and it'd probably be a good test for you to go three months without them and see if any symptoms abate. Instead, get your carbs as veggies, the occasional few berries, limited amounts of nuts, seeds. This also provides more variety--pumpkin seeds one day, macadamias the next, sunflower seeds day 3, almonds day 4, etc.
Try different sorts of meat, too--all sorts of fish, seafood, maybe you can find some rabbit or game meat supplier near your home (or make buddies with a hunter!) Buffalo and alligator are both great.
