I invite you to start a journal over in the journal section, it's a great way to keep track of your stats, intake, exercise etc etc, so that if you run into any difficulties we can jump in and plaster you will all kinds of support and pep talks
Hamburger patties are fine, so long as they haven't added any cereal to them. A great book to invest in is The Complete Book of Food Counts, by Corinne Netzer. Every food imaginable (even the ready made frozen varieties) are in her book, with all the nutritional counts.
Cashews are worth about 4-8 g carb per ounce, depending on the brand - so go easy on them. A handful of cashews can work out to be 1/2 your daily allowance of carbs!
