Default Flour substitute?

I've been wanting to fry up some chicken/fish, but I know I shouldn't use flour. Is there any low carb substitutes I could use? If so, what is the carb count in them? Thanks.

Have you tried the low carb fried chicken made with cheese and almond flour? Check out the recipe section.

Breading can be done with finely crushed pork rinds on an egg base.

Or an egg wash followed by parmesan cheese.

Check out the Recipe section in Main Dishes.

I usually coat things with egg then dip them in ground almonds (almond flour). It browns nicely.

I love soy flour. I get it at the Whole Foods Market. I season it up, dip my meat in egg then the soy flour and fry away. Soy flour is a little bitter but once it is cooked it makes a very good breading. My family will request mom's lc fried chicken.

I have used soy flour since I began OWL. It is very low in carbs and Mike Stella ( I think that's his name ) on the tv show, Low Carb And Loving It, uses soy flour. I don't use alot of soy as it is said to cause thyroid problems. But periodical use has caused no problems.

Yes, wheat gluten is even lower than soy flour in carbs. I use that sometimes but not as a breading. It costs more than soy flour so I don't use it as often. Both are rich in protein. If you have a wheat allergy you might choose soy flour. If you have thyroid problems, you might consider the wheat gluten.
