And an alternative
Feel free to increase proportions to make larger quantity:
.25 c blueberries
1 fl oz cream
2 eggs
1 scoop designer whey (at least that's the brand I like best - but have used others with success)
.25 c cottage cheese (dry curd)
Mix together
Blueberries are optional, as it is a nice custard without. However, for the muffin idea - would make a nice addition.
Add sf syrup, nutmeg, cinnamon or whatever your taste desires.
I usually bring it mixed for breakfast to work - nuke it for 3 - 3.5 minutes. When at home, I've fried it in a pan - haven't gotten around to putting it in muffin tins, yet, but may try that another day.
