Just made the most DELICIOUS chicken enchilada casserole!!

Here's the recipe:

4 chicken breasts, cubed and pan friend in canola oil and green peppers
2 oz cream cheese, cubed
6 oz mont. jack cheese, cubed
small can green enchilada sauce
2 tbsp green peppers (canned)
sour cream for garnish

Brown chicken breast pieces in a pan with some canola oil and green peppers (canned). Take the cream cheese and mont. jack cheese and spread evenly throughout a 13x9 casserole dish. Place chicken evenly in dish and pour enchilada sauce over the top.

Bake until all the cheese is melted, then cool for 10 min and serve. Top with real sour cream.

YUMMY!! I've added it to Fitday, so hopefully it's available for others to use. it's under chicken enchilada casserole-(tortilla-less)
