Default how do I make Sainsburys BGTY chicken range

Hi Well I like to think I am a good cook - but actually I am pretty basic, and all my recipes contain pasta or rice

Anyway I am still not quite cheat free but working on it!

For lunches at the moment I live on these Sainsbury's BGTY Coronation chicken and basil and tomato (link to sainsburys if you are not sure what I mean)

How would I create this in my kitchen so I don't have to spend that much money! Although these versions are nice I am also happy to try other flavours too - just something I throw in my bag with some salad and mayo for an instant YUM lunch

(although have just eaten mine and I could eat it all again Hello to TOM!))

I am posting here rather than the cookery section because its sainsburys.

Any ideas

Are these the ready to eat cold chicken ones?

Coronation chicken is easy.

Fry off 1/2 a small onion until very very soft then add 1 tsp of korma curry powder. Fry until the spices are well coated with any oil and you can smell it.

Mix this into full fat mayonnaise. Season with salt and pepper to taste and then just fold in cooked chicken. You couold add a very few sultanas if you like but they're very high in sugar. I'd add in chopped celery and walnuts.

OR

Pour some oil in a shallow roasting tray.
Sprinkle with korma curry powder.
Add whole chicien breasts, turning them well in the oil until coated.
Roast in a medium oven until cooked.
Chop then stir into mayonnaise.

Tomato and basil is easy too.

Lay whole chicken breasts in a pan.
Pour over enough chopped tomatoes to surround each breast.
Sprinkle with garlic salt and onion salt or just add chopped fresh onion and garlic.
Cook until nearly done then stir in a good handful of chopped basil OR a tbs of pesto.

OR just get a jar of RED pesto and mix cooked chicken with that!

Thanks these look great, I will give them all a shot this weekend, and hopefully stay on this OWL and not cost me a fortune!

By the way I love the saying its one of my favs and the pictures look great
