Wonderful Spinach Souffle
I have been eating this since I was a teenager. It is our favorite spinach dish, and always is a real hit with company. I often have to copy the recipe for those who taste it. It was so easy to modify the recipe to low carb. All I changed was the topping. Hope you guys like it as much as we do!
Spinach Souffle (My Mom always called this Spinach Fondue, but that just doesn't seem right!)
2 packages frozen chopped spinach, thawed and drained well
1/2 onion, diced
1 t salt
1/8 t pepper
1/8 t paprika
4 eggs, beaten
1/2 lb. shredded cheddar cheese
1/2 c cream mixed with 1/2 c water
1/4 c finely crumbled pork rinds
1/4 c melted butter
Combine first 7 ingredients, place in 1 1/2 quart casserole dish, cover with last 4 ingredients in the order listed. Bake at 375° for 30 minutes or until firm.
