Default Having a hard time...

with side dished for my family...

My boyfriend doesn't like most "green" veggies and cauliflower, which eliminates a lot of possible side dishes. We've only been on a week, but I'm running out of ideas!

Help!

Usually if you cover them in cheese, even guys will eat them, LOL.

Does he eat green beans?

My DH eats very limited veggies but he loves these two.

Saute onion and garlic in a good amount of olive oil.
Add one can of green beans or the same amount of fresh. Stir fry on low until softened slightly then add in 2 chopped fresh tomtoes or a couple tbs of chopped canned ones. (no added sugar ones)

Simmer until the sauce has thickened.

Or I just saute the green beans in butter and garlic or in olive oil then squeeze over fresh lemon.

How about mashed turnips? Peel, boil or steam until tender then mash with cheese, butter and a touch of nutmeg.

I haven't experimented with turnips yet. I'm kinda scared! haha. maybe I should think about that...

It's worth a try...I too have a Mr Picky. You have my sympathies...Mind you, I just tend to cook tons of different veggies for me and he looks at his boring plate with a little surprise.


Oooooooh how about roasted peppers?

Cut bell peppers in half.
Remove the seeds and the core.
Plave 1/2 a small tomato in each one.
Sprinkle over finely chopped garlic or garlic salt.
Drizzle well with olive oil, don't be shy with it.
Roast in a medium oven until they've literally collapsed and are soft.
Gorgeous.
Store in the fridge though with a little extra olive oil as they tend to go mouldy.

I used red, orange and yellow and the pan was such a colorful siught.

Or roasted zucchini?

I did roasted cauliflower once, that was pretty good too. (for yolu not him)

Brocolli steamed unti tender then mashed up with cream cheese and grated sharp cheese. Good side.

Thank you so much!! Those roasted peppers sound wonderful! I will definetly try them soon. Mr Picky loves peppers so I'm in luck!! =)
