Question "Vital Wheat Gluten" vs. "Vital Wheat Gluten Flour"?

Are these one-and-the-same? It seems like some recipes call for one or the other but I can't tell if they are the same item or not. Any help is greatly appreciated!

I had the same question Jenn. No, they are not. Vital wheat gluten can be added in small amounts to many baked products. The flour is a flour WITH vital wheat gluten in it, but it is still a flour (just... one that you don't need to add any more gluten to).

Vital wheat gluten and vital wheat gluten flour are the same thing. What you have to watch out for is wheat gluten flour and high gluten flour .

If you're buying it in bulk ask to see the nutritional panel. If it's 75-80% protein, you've got the right thing.

Thanks, PJ, for the links! They are very helpful. Also, thank you Karen for the additional info. I guess "high gluten flour" is similar to "bread flour"-- loaded with carbs.

Oh! Learn something new every day. :-) I thought they were the same initially, and made a tortilla recipe I found here with VWG that didn't say 'flour' after it, and it was utterly impossible, texture more like HC chocchip cookie dough (ultra sticky), not tortillas, impossible to press or roll. So I thought I'd need to get the 'flour' on the label as it was different, and read something to that effect -- I should know to come to Karen for real answers! Thanks!

Just throwing in another tidbit..

vital wheat gluten flour has 6 carbs per 1/4 cup. Much, much better than 'regular' flour which has 24! Yikes!!

Glad I found this post! I just bought some - vital wheat gluten flour, after trying to figure out if it was the "right" one.

Have an awesome recipe for 'real pancakes" which I am anxious to try and this was the one ingredient I was missing.

Almost thought I had the wrong one! YIKES!
