Default Zuchinni Nut Bread

Hi!
This morning I went to the Atkins (official) site and saw that there was a recipe for Zuchinni Bread on Induction, no less.

It calls for a SCANT cup of bake mix. What is a scant???


Also, has anyone tried this and is it anygood???

A cup of bake mix is just that....a cup.

The scant was probably in reference to normal bread mixes have 2 to 3 cups of flour, thereby making reference to "this recipe only calls for a mere one cup as opposed to 3 or 4 of others".

Don't you just love people that use word smithing to confuse you?

"Scant" means not quite a cup. Around 7/8 of a cup should do it. You see this reference to teaspoons and tablespoons of ingredients too.

As in "scantily clad", there is clothing involved, but not quite enough clothing to make a dress.

Hi Pam!!

That might be the same recipe I gave you that I use for the Zuchinni muffins. I got the recipe from the new Atkins book.
I haven't tried making the bread loaf yet.... but I love the muffins and they freeze well and warmed in the microwave, they are heaven!!!

I will post the recipe in recipe section.... but for now it is in Thin's journal!!! (Page 10)
