Default Conflicting carb counts

I'm soooo confused! I keep finding wild discrepancies in carb counts. For instance the Atkins website says 13 average sized strawberries contain 5 grams of carbs. But the carb counter says much more. Then the ice cream receipes say the basic custard receipe has 3.5 carbs for 1/2 cup. But, 2 cu heavy cream (label says no carbs), 4 egg yolks (counter book says eggs are .4 each = 1.6), 8 packets of splenda = 1 carb each. I don't know what vanilla beans have. I can't find a reference anywhere that tells me that. Besides - I would think you could substitute vanilla extract. That doesn't have any, does it? There are 6 servings. I count a total of 9.6 carbs, divided by 6 servings should equals 1.6 carbs per serving. Where do they get 3.5? Is there a better, more complete, consistent carb counter anywhere other than the Atkins website? Everytime I turn around there are discrepancies. Help!

Hi there Fairydog,

First about the cream having "no" carbs... Manufacturers are permitted to say 0 carbs if the amount is less than 1. You have to carefully read the labels because they are allowed to say 0 per serving, even if it is, for example 0.9 per tablespoon, that being the serving. So a larger amount may have more.

Cream actually has 0.83 carbs per fluid ounce, but 6.6 per cup.

I mostly use www.fitday.com to count my carbs. You have to join, but it's completely free. Can seem a bit complicated at first, but this thread Fitday.com How To's gives some hints on making it a bit easier to use. Or you can use the crabohydrate counter on this site. You'll find it at the right side of the screen, under "Quick Links," 3rd from the bottom.
