Question substitute for zucchini

Hi Karen,

I recently took a low carb desserts class that you gave at the Cookshop, which was fantastic by the way but i wanted to know what i can subsititute for the zucchini in zucchini cake. Can I make the cake w/o the zucchini? I'm asking because my husband refuses to try it even though I loved it and you can't really tell it's in there.

Hi Tricia,

I don't know about what you would use as a substitute without making the carb count wacky. And if your husband won't eat zucchini in a cake...it's not likely that he'll eat chayote or kohlrabi either.

It would probably be OK without the zucchini - if a little bit dry - but the icing should help. Try making half the recipe and see how it goes. You could add more spices and turn it into a spice cake!

Would daikon work?

I've even seen recipes (pre-LC) with chopped sauerkraut in the mix (it was a chocolate cake).

When I was working on the zucchini cake in question, I tried on daikon. Let's just say it was not worth repeating! Sauerkraut might be problematic too. Sugar causes other reactions - you probably remember how carrots or zucchini disappear - in a high carb cake. THe reaction is totally different without the sugar or flour.
