Question How Do I Count These Carbs?

I am already familiar with being able to subtract grams of
dietary fiber as listed on the label from your total carbs for the item.
I also, however, sometimes see another listing in that indented
area under the carbohydrate reading called "Sugars."
Quite frequently when this happens, the number of grams of
dietary fiber and "Sugars" are equal.

A typical food label will look like:

Carbohydrates: 21 g (2%)
Dietary Fiber 3 g
Sugars 3 g

How do I interpret this? Can I still subtract the three grams of
fiber to make the end figure 18 g, or does the "Sugars" figure
offset that (cancel it out?)

Just subtract the fiber from the total carbs. The tricky part is when you find something that lists sugar alcohol. Most people can subtract these also, but some people respond to these alcohols just like they would to sugar.

Yes, you can subtract the 3 gm of fiber from the 21 gram total for an Effective Carb Count of 18 grams. The "sugar" count is just for information. The rest of the 15 grams must be starch of some kind and those are not shown on labels.

Many foods contain sugar as they grow - carrots are rather sugary vegetables which is why they are not on Induction. Also fruits and, surprisingly, milk. There is less sugar in cream, least in heavy cream. And the cow puts the sugar in.
