Question Question on weight training and low carbing

I'm currently on phase one of South Beach (with some slight changes) and training regularly at the gym. I work out 5 days per week using machines and free weights, with 15-25 minutes cardio after I lift. Question: What is the best way to low carb in such a way as to benefit my lifting? When and what should I eat to get the most out of my lift? My basic weekly program is:
day 1:legs, cardio
day2:chest, tris, abs, cardio
day3:shoulders, cardio (or rest depending on how I feel)
day4: legs, cardio
day5:back, bis, abs, cardio
day6:rest or cardio
day7:rest
Any ideas?

CKD or NHE is best for weight lifting.
There is a CKD forum here.

Weights 5 days a week seems a bit much though.
NHE recomends only 4 days of lifting MAX.

Thanks for your reply, Jag.
I posted my concerns about doing CKD on that forum...basically I don't really trust myself. Despite that, I'm really interested in NHE. I'm trying to learn more about it. I really want to lose the fat that's covering the muscles I've been working hard for.
I'm thnking about including shoulders with back and bi to give me an extra rest day.
