Maltodextrin is a high-glycemic carbohydrate, and will affect blood sugar and insulin level. Of course it depends how much you consume.
A product which shows "zero" carbs per serving may in fact have as much as 0.9g of carb in it ... Labelling laws in the US permit anything below 1g to be listed as "zero". If you're having an amount that's equivalent to 3 or 4 servings, those partial carb grams can add up. Note also that in the US, manufacturers can label something as "zero calories" if it has less than 5 cals per serving.
Just a suggestion, but your best bet is to observe the amount that's considered one serving, and count as 1g carb to be safe.
