hi all

i've just joined this group and thought i'd introduce myself. my husband and i are both vegetarian and are coming towards the end of our first two weeks doing atkins induction.

thought i'd share a little recipe i invented for vegetable bake:

melt some butter in a saucepan and add a packet of crumbled up silken tofu (it's the *really* soft one). add some milk, grated cheese, a tiny pinch of nutmeg, some black pepper, some grated cheese and then once that gets nice and hot, spoon in some of that kraft cheese spread (comes in the jars next to vegemite in the supermarket). after this is all combined, i make it smooth by using my handheld 'billy' straight in the pot.

then the difficult part - pour this over some parboiled vegetables in a baking dish, grate some cheese on top and there you have it! we've been using cruciferous vegies (ie: caulis and broccoli) and occasionally some zucchini as well.

if there are any other australian vegetarians on atkins i'd love to try and make this diet a little easier by swapping information. i know there is a vegetarian forum but it seems to be mostly americans discussing products that we cannot get here in australia, which is unfortunate.
