It would be shorter to tell you what you can't do with it. Cream cheese is incredibly versatile. As far as recipes around here, it is used in main meals like baked chicken dishes, snacks, desserts, protein shakes -- there is no limit really.

I'd say the one that looks most interesting to me at this moment is the stuffed roasted wrapped jalapenos, you should be able to find that one under a thread title of something like "good and good for you" as I recall.

You can add a little to soups to make them creamier.

I like to spread a little on celery and eat.

Spread some on pepperoni slices for a great snack!!

Makes the BEST cheesecake.

Spread on smoked salmon.

Here's a recipe for stuffed cheeseburgers from bbudke on the Protein Power Board.

Stuffed Cheeseburgers
2 lbs ground chuck
1/4 c low-sugar BBQ sauce
1/2 T Worcestershire sauce
4 strips bacon
4 oz cream cheese
1/4-1/2 c Salsa Verde (depending on desired flavor/heat)

Lightly mix ground beef, BBQ sauce and Worcestershire sauce with hands.

Cook bacon until crisp, and crumble. Mix bacon, cream cheese, and salsa.
Form ground beef mixture into eight patties. Place 1/4 of the cream cheese mixture on top of four of the beef patties, leaving at least 1/2 inch to the edge. Place another beef patty on top of the cream cheese mixture, and pinch patty edges together. Lightly pat stuffed burgers into shape; salt and pepper; grill to desired doneness.

This cheese is soooooo versitle, the only limit is your imagination.

Hi! I make this in a blender and it is fabulous! I found the recipe here on the forum and it sure makes this WOL easier for me.

Take one package of sugar free jello and put it in the blender. Add one cup of boiling water and blend it well. Add two eight ounce packages of cream cheese (I let it sit out for about 20 minutes first) and blend. Then add 1/2 C. of sour cream, a couple teaspoons of splenda and about 1 t. of vanilla. Blend well and pour into 4 serving cups. When I have extra carbs to work with I add a cup of strawberries, blueberries, or raspberries to the blender.

For breakfast, you might try the mock danish (which is famous here) or a version thereof. I put 4 ounces of cream cheese in the micro wave till it is really soft. Then put it in a bowl with two eggs, 1 T. splenda, 2 t. lemon juice, and a dash of vanilla. Beat it with a fork but not too much as you want some of the creamed cheese to be in little chunks! Then spray a microwave bowl with pam and microwave it until it is firm. Great breakfast!

Good Luck! Cindi
