Exclamation Your support really helps

Hi everyone, Well today is exactly 7 days since I started Atkins and I'm down 6 lbs. and my waist is an entire inch smaller! I find it hard to believe but there it is. Yogourt is the food I miss most but I'll add it back in a few weeks.

I must say that this forum made all the difference. In fact, I don't think it would have happened without you guys. Thanks so much. I particuarly love reading the journals. My job has very long hours and I haven't time at work to check in. I don't think I have time to write my own journal except once or twice a week. Is that ok? I work 6 days a week and often 12 hours a day.

You have done GREAT!!!!!!!!!!!!!!!What a weight loss!!!

Don't you just love how much better you feel! And to lose a whole INCH in your waist, Way to go Girl!!

Here is a dessert recipe I made today, and it is very very good, and might help you with missing yogurt.

1 envelope of gelatin
2 cups of heavy cream
8 packets of sugar substitute (I only used 3 of Splenda)
1 vanilla bean or 1 tsp. of vanilla extract

Lightly oil 6-6oz. custard cups. In small bowl sprinkle gelatin over 3 TBLSP cold water and let sit 5 min. Meanwhile, combine in medium sauce pan heavy cream, 1/2 cup water,sugar sub. Bring to boil over med. heat. Remove from heat, add gelatin mixture and vanilla , stir until melted.

Pour into custard cups, cover with plastic wrap, and refrigerate at least 3 hrs.

Carbs - 3.5 grams
Net Carbs - 3.5 grams
Protein - 2.6 grams
fat - 29.5 grams
Calories - 283

If you use vanilla bean, make sure you scrape out seeds before you bring mixture to a boil.

It is very very yummy!!!!!
Can add almond or coconut flavoring instead of vanilla.

Hi Sandy, I'm sort of in a daze. Thanks for your kind words and terrific recipe. I'll make it tomorrow and let you know how it goes.

About a year ago I went on a strict lo-cal, low fat etc diet. I was starving all the time and since I have a super active job I couldn't stick to it. I lost 1 lb in 2 weeks and gave up. Atkins is sensational. I really feel that I'm eating a healthy diet for the first time in years. Sure I miss the junk food but not nearly as much as I thought I would. In fact, I'm stunned that it has been such an easy first week, and am looking forward to next spring when I reach my goal. Nice talking to you and keep the recipes comming. Nancy
