Baked Egg Quiche
This is a variation on a baked egg recipe, but uses tortillas to make a quiche. This recipe makes two, but you can easily double up.
Ingredients:
1 Mama Lupe Tortilla
2 eggs
handful of grated cheddar
chives
sundried tomato paste
paprika
Method:
Cut tortilla into 4 quarters
generously oil/butter a muffin tin
use 2 tortilla quarters to line each muffin hole (overlapping the point bits so that they lay flat across the base) and press into the shape of the muffin hole.
Spread a teaspoon of sundried tomato paste (or harissa) on the base
Break an egg on top (I used large but had to scoop out some of the white as there was a bit too much)
Sprinkle over the cheese and chives
Dust with smoked paprika
Bake at 200 for 15 to 20 mins
You can also beat the eggs if you wish with a little cream if you want more of a mixed egg consistency - I prefer it with the whole white and yolk.
