Default Help! Need recipes for "less than 4 ingredient" meals!

By the time i get home in the evenings I've only got about an hour to prepare and cook meals for my family. I love to experiment with cooking but have to save that for the weekends and I am running out of ideas for the quick and easy meal. Any ideas will be greatly appreciated. I do have a slow cooker and like to use it but have not yet for any low carb recipes.

Hi there,

suggestions:

Caulifower bake.

Cook and mash cauli with olive oil, add chopped spinach and grated cheese, mash again, put in baking dish, sprinkle cheese on top and bake in oven till brown and bubbly.

Baked vegetables.

Take onion, garlic, capsicums, mushrroms spinach.
Fry gently in olive oil, add courgettes in large chunks. Add spoonful of tomato puree.

Don't overcook
put in baking dish, put feta cheese or other goats cheese on top (generous helpings), or mozzarella, cheese of your choice.

Bake in oven until brown and bubbly.

Could also add tin of tuna and parmesan cheese to both these dishes.

These are both standby's for me. They are really simple and take next to no time to prepare, then you can get other stuff ready while they're baking.

i'm a little challenged in the kitchen lingo dept--would you mind filling me in on what capsicums and courgettes are? these recipes sounds fantastic! i really appreciate them.

Hi there,

Sorry, I'm from the UK!

Courgettes are zucchini I think in US,

Capsicums are also called peppers here(they're the big sweet ones usually red or green). But I'm not sure if that's what they're called in US.

I think they're called bell peppers in the US
