Karen-approved Texas Chili?

Hi Karen!

I am looking to make Texas chili and cannot decide between the plethora of recipes I've found online. Do you have a favorite?

No I don't have a recipe per se but there are certain things I do like roasting guajillo chilies, seeding them then soaking and pureeing them as the base for chili. I roast tomatoes, then peel and seed and use whole toasted cumin seeds for little zings of flavour. Pork shoulder is good in chili.

If you want to post the links, I'll have a look at them.
