Cottage Cakes
While 'technically' a breakfast food, I rarely have these for breakfast, so I put the recipe in "Quick Meals & Snacks".
Cottage Cakes
1 cup cottage cheese
2 eggs
3 tbsp oat flour
3 tbsp soy flour
3 tbsp almond flour
1 tbsp splenda (or 1/2 tbsp splenda, 1 teaspoon liquid Sugar Twin)
pinch of baking powder
1 or 2 tbsp cream to thin it out if needed. (recipe calculated with 2 tbsp)
Heat griddle and melt butter (approx 350 degrees); place 1/4 cup on frying pan/griddle and cook until bubbles appear and bottom is golden brown; flip and cook until other side is golden brown. Serve with LC syrop, Peanut butter, LC jam, or ricotta. They make a great ricotta delivery device.
