Thanks, A Thin Me. I love salmon, but never know what to do with leftovers, so I'm glad for the idea.
For dinner, I'm also having the second half of yesterday: Mock Swedish Meatballs. I bought some already prepared meatballs (no breading, just beef, pork, veal and lamb, and spices, so they'd be easy to do, and one wouldn't need four kinds of meat), browned them, took them out of the pan, poured off a little of the grease but left the "drippings" and added 2 oz of cream cheese and a splash of cream. (This was for one serving, four meatballs). Cooked until it looked like a sauce. It was wonderful! Tonight, I'm doing the same thing, but putting each meatball in a mushroom cap (that will be sauteed in butter first).
