Mexican style Pork Chops
I marinated 2 butter flyed pork chops in olive oil, a little lime juice, salt,cilantro, and garlic. Then I baked them in the oven until they were almost done....took them out and browned them and then transferred them back to the baking dish. I topped each with a little cheese(abot 1/2 - 3/4 of an ounce) and put them under the broiler. Once the cheese was melted I transferred each to a plate and topped each with 1 TSp of low carb Salsa( I found some that was 1 carb per TWO teaspoons). I then topped each with 1/4 of a chopped avocado, and 1 TBL spoon of sour cream. YUM!!!!!
