Default Muffin Mix Recipe

Hi guys! I posted this in the other thread, but thought I'd add it here in case you miss it.

I have the Picture of Health "cereal" mix and am keen to make the muffins. Can someone please post the recipe suggestion to make the muffins?

Here we go:

MUFFINS - Basic recipe

Makes 6 regular sized muffins - 1g carbohydrate per muffin
In a bowl, place:
1 cup of PoH Low Carb Muffin Mix
2 tspn baking powder
2 eggs
1/4 cup SplendaŽ
1 tspn vanilla
150ml of liquid: cream, buttermilk or water - more or less to taste.

Bake for 25 minutes at 160C or until a light golden brown. Muffins are ready when a knife inserted into the centre comes out clean.

No worries!

I have never tried making the muffins with the cereal mix, let us know what you think (I am not a big fan of cereal anyway, so I didn't buy the cereal mix).

Veyr cold in Sydney today...Perfect for a nice warm muffin and a cuppa!

Looking at the nutritional information, the muffin mix and the cereal are exactly the same! Looks like you were eating cereal all along - funny how they market things. Thanks for those links.

I wanted to make some choc-coconut as suggested, but noticed I was missing a few ingredients. So, I made the recipe using 150mls of coconut milk (adding about 1 g of carb per muffin) and a bit of extra water. I grated 2 squares of the zero carb chocolate to sprinkle on top.

I've just popped them in the oven! Fingers crossed...
