Default Need some veggie snack ideas...

I've been getting my 3 cups/day in without any problem by having celery w/cream cheese in the early afternoon and then a salad at supper (lettuce, cucumbers, and lots of other non-vegetable toppings). I'd like to go ahead and add another veggie snack in...maybe mid-morning...but it needs to be something simple...and needs to disguise the vegetable sufficiently so that I can get it down without gagging. I know once I work a new veggie in, eventually I will get used to the taste and perhaps grow to like it...but I've never eaten many vegetables and I'm slow to change. Any suggestions?

Ah, I know we've been through this before on another thread, but how about pinching your nose and forcing down a glass of V8 tomato juice?

Quick, painless, and even has a little fiber? LOL

A lot of things taste good with a good dip. I like raw cauliflower that way. You might also try radishes, or bell pepper strips. Red bell peppers are sweet and delicious, and have lots of vitamin C. I know people who won't touch cooked broccoli, but like it raw. Raw asparagus is also good if you cut off the woody bottom portion and peel the stalk a little.

I make a faux onion dip by blending down cottage cheese with some Braggs Aminos and dried onions -- or just use the onion soup mix, if you like. Mixing in a little plain yogurt improves the taste. Or use a good salad dressing (Ranch, bleu cheese, a really good italian) as a dip.

How about veggies and dip? Try broccoli, cauliflower, celery, and mushrooms in a good thick creamy ranch or blue cheese.

Don't know if you're eating nuts, but peanut butter disguises celery pretty well, too.

I've also been making these ... Spinach and Cheese Frittatas. Good way to add spinach that doesn't taste spinachy, really.

Stuffed mushrooms (fill with cream cheese, garlic powder, salt and bake) are also good.

Have you ever tried radishes? Hearts of palm? There are some interesting veggie choices to be made.
