That is why every stage of Atkins is important. If you stay on induciton until goal, then suddenly try to add foods back in, yes you will gain the weight back.
Instead move through all the phases of the diet, learning what foods you can tolerate and how much. Learn what your critical carb level is where you maintain weight without gaining.
It's also good to learn about low glycemic carbs. You probably can't ever go back to pizza every night and cereal in the morning with bananas. If you build up slowly you will be amazed how many healthy foods you can incorperate without gaining weight.
Adding the foods back in slowly also really helps discover any food intolerences. There may be some food groups you can only eat in moderation because they cause weight gain, or trigger poor health. I know I can't have much dairy or sugar alcohols, while fruit I don't have a problem with.
