I made a recipe for low-carb flax seed muffins. The recipe can be found here . The batter by itself was soo good! I put some of my Davinci French Vanilla Syrup in it. When I baked them, they turned out fairly tasteless. They were a little undercooke, but otherwise the consistency was decent. Any suggestions on how to flavor these things up? I added lots of cinnamon and a little brown sugar twin on top. I also added some extra baked powder so they would rise. I suppose I could just add some butter to them when they cool and maybe a little more cinnamon on top?

I'm wondering how I could make this into a breakfast no-cook cereal. I feel a little weird eating muffin batter, but it was really good! What could I omit? The flour? So I could eat flax meal, half and half, butter, and flavorings? Do I need the egg? I want it to have some volume, but I also don't want to eat 1000 calories for breakfast. Just a nice size bowl like oatmeal would be fine.

I like to have peanut butter or cream cheese on my flax muffins. That might help. Not sure about eating them raw, sorry that I can't offer any suggestions for that.

I make some fake oatmeal for breakfast:

3T ground flax
3T TVP (textured veggetable protein)
cinnamon
splenda

cook the TVP and Flax for about 2 min in microwave with 1/4 c water (TVP absourbs the water) Then add some cinnamon and splenda and some milk (soy or cream)

otherwise I would think you could make the muffin mix into little balls and cook them and make them into little cereal balls. I wouldn't eat this raw due to the eggs (you dont want salmonilla, trust me!!!)

The TVP is at health food stores and is slightly carby, but not too bad in just 3T, it is then just like 1 gram.

Just an idea! There are tons of postings on these boards about TVP if you do a search! I like the recipie, thanks!

i want to try making flax seed muffins but i have a couple of questions (i'm baking impaired).

is whipping cream the same things as heavy cream?

for maple flavoring and vanilla, is that just extracts? i think the vanilla extract i have has corn syrup in it. is that ok?

is there any way i could incorporate wheat bran into the recipe?
