I have to admit--I'll freeze anything! I bought a freezing and canning guide, and I freeze berrries in summer (such a treat during the dreary winter months!) and home-made tomato sauce, and sometimes blanched veggies.
I buy giant sized packages of chicken breasts or pork chops on sale, bake them, keep out two day's worth for immediate meals, then put each of the leftover ones in a small zippered freezer bag. I take these to work, and often use them at home as a snack or fourth meal. You could do this with any sort of simple meat--hamburgers would work well, I think, and I do freeze slices of meatloaf. The microwave makes getting these from freezer to table a very quick process!
Chili and soups freeze great. I also make turkey stock with the leftover bones (I only buy turkey breast so, not a big carcass), some carrots and onion. Then I freeze the plain stock in plastic containers and anytime later that I want to start a new soup or stew, I use the stock instead of water (or half stock and half water)
I'm pretty experimental, too--I'll try freezing anything once, and seldom does it fail. (egg-y and cheese-y dishes tend not to work). So try some small batches of whatever you'd like and see how it works.
