Default Help - Flax - heating it?

I've noticed that many low carb baking recipes call for flax meal.

I thought I read somewhere that heating flax makes it dangerous to eat?

Please explain!

Hi. From what I understand, the oils in flax are stable during baking, because they're basically "steamed" and the temperature doesn't get high enough to damage the fats. What you really want to avoid is direct heat, like frying or microwaving. This causes the omega-3s to degrade into lipid peroxides. They're not good for you. That's why it's better to cook with butter, coconut oil and other stable, saturated fats.

I think heating flax meal is fine, but you dont want to heat plain flax seed oil.

I grind my flax seeds, mix with a little milk, add to scrambled eggs and cook it all up like an omlet. I am doing this for the omega-3s. Is this okay, or I am losing all the benefits?
