Belgian Endive w/Cheddar,bacon,red pepper
2 belgian endives washed, seperated into leaves
1/4 c. sour cream(mixed with 1 tbsp grainy mustard)
3 slices cooked bacon, crumbled
1/3 c. minced roasted red peppers(or yellow or orange)
11/2 c. cheddar cheese broken into nuggets
Into each leaf drop some sour cream mixture, sprinkle w/bacon bits,cheddar bits and peppers.
Garnish with your choice of black pepper, or herbs.
