I feel that same way....ALL THE TIME...and to top it all off I am a picky eater

Some of my Favourites are:

Chicken Ceaser Salad (with cajun spice on the chicken)
StirFry no rice or with the Cauliflied Rice
Deep Dish Pizza Quiche
Bacon and Eggs (omelette, boiled, fried anyway)

I find it tough to get organized and not a big fan of cooking...so I'll be checking up on this thread to get some ideas of my own!

Have you thought about using something like ediets which plans out your foods for you according to the type of food plan you want to be on. I did it once and I thought it was pretty good. You can list foods you like and don't like, and it works up meal plans and a shopping list for you. If you don't like a meal, you click a button and choose another one instead. It does a week at a time. There is a charge for it, but the might have a trial. Just a thought.

There is a ton of veggies on the allowed foods list

Make zucchini french fries
Cauliflower mock mashed potatoes or moch rice
Fried cabbage or coleslaw
Spaghetti squash with spaghettu sauce or garlic butter
pumpkin with cream cheese and spices
Mock Jicama oatmeal
celery filled with cream cheese
avacado filled with tuna or chicken salad

There is an entire recipe forum on here with a section devoted to veggies. Also quick meals and snacks.

Try making your salads more interesting by adding various meats, eggs, and other goodies. Try out skillet meals wher eyou throw everything into a skillet and cook. Do this with chicken, prpperoni, cheese and sauce for a piza skillet. Brown meat then fry salad greens with them for a wilted salad. Cook bacon, then fry cabbage in the grease and crumble the bacon back into the cabbage.

Get a cook cookbook as well. I really like Dana Carpenders "500 Low-Carb Recipes" Look up recipes online, and go through peoples journals for menu ideas

Now, now, I bet before you tried Atkins, you ate the same things over and over, hmmmmm?

Spice up your menu with roll ups. Used to love sandwiches, as I did? Eat those sandwiches, just without the bread, or get low carb tortillas.

Break out of the box with breakfast. I don't feel hungry for a couple of hours, so by the time my coffee is all gone, I feel like real food.

We all want change WITHOUT changing. Sure, it was easier to eat whatever, but then clothes shopping becomes harder.

Trade off. Cook a new dish in big quantities (once you know you like it) and then just zap individual portions whenever you want food.

There's lots of ways you can go, you just have to decide what is most important. And if you want to hear about really bad cooking, check out my journal.

My hardest thing was breakfast. I love eggs, sausage bacon and all that, but I couldn't eat them for breakfast they would make me gag!!

so I bought the atkins shakes, they were a miracle for me and took care of one meal so I only had to think about two. Now they are expensive so Im now experimenting with finding one I can make myself!!

But start out with the meats your used to eating and then try adding more..I was a chicken, turkey eater so I didn't add beef or pork or anything like that till a little later as not to upset my stomach..(thought they were wonderfull when I finally did!!)

I started out simple like taco salads(without the taco hehe)-this is still my favorate
Tuna,(or turkey in my case) with mayo wrapped in lettuce and topped with a tomatoe cheese and stuff.
I even tried a fajita wrapped in lettuce it was good!!
hambugers wrapped in lettuce..
simple salads with tuna, or chicken on top..
another one of my favorites is egg salad on a celery stick!
I like simple as I work at home and chase a 4 year old so I like quick meals.

Though I have looked in the recipe section and am trying to slowly expand...but its best to start with what you know(minus the carbs hehe) and keep going and trying new things!!

Hope this helps a little
