Default flour

I can not use soy flour. I have seen nut flour and
flax seed meal listed for some recipes I might be interested in. They are not in the gourmet stores in my small town. The closest large city is Atlanta. Where can I purchase these items? Are there some other substitutes for these if they are
not available. So far I have lost weight on the diet & would like to continue.

You can also make your own, by finely grinding nuts in a blender or food processor. Use an on/off pulse action, rather than steady grinding ... or you run the risk of having nut BUTTER instead! Flaxmeal is best made using a coffee grinder or spice mill ... the seeds are so small and hard, they'd just dance around in the food processor ...

Grinding your own nuts and flax seeds ensures freshness and is so much cheaper. Flax especially goes rancid quickly once it's been ground ... if you do buy flax pre-ground, make sure the package is vacuum-sealed, and light-proof (foil). Once opened, store in an air-tight container in the fridge or freezer. However, the whole intact seed will keep for several months at room temperature .. just grind up what you need at the moment, or what I do is grind up about a week's worth at a time, and store in a glass jar in the freezer.
