Atkins bake mix

Has anybody tried atkins bake mix for breading and frying eggplant? Results appreciated.

I haven't tried it on eggplant, but I did try it on cube steak and it was OK. It just had sort of a different taste. It's better than nothing though!!

Well, I'm allergic to eggplant so I haven't used it for that but I dip chicken breasts in egg then in the bake mix and fry and it's pretty darn good!
